Elotes is a traditional Mexican dish made usually with freshly grilled corn on the cob. It is a creamy, rich, and delicious dish. Don’t have corn on the cob handy? Keep reading to learn how to make Elotes with canned corn.
What are Elotes?
Elotes, also known as Mexican street corn, is a popular snack in Mexico and other Latin American countries. It is made from grilled or boiled corn on the cob that is then covered with a variety of toppings, such as mayonnaise, sour cream, cheese, chili powder, and lime juice. Elotes have unique flavors and textures and are also known as Mexican corn salads.
Can You Make Elotes with Canned Corn?
The traditional Elotes recipe calls for fresh corn on the cob but canned corn can also work well for this popular dish. Canned corn is more convenient, quick to use and has a long shelf life as well. You can make Elotes in less than 10 minutes by using canned corn.
Different Corns to Use
There are several different types of corn that can be used when making Elotes, each offering its own unique flavor and texture.
- White sweetcorn: White sweetcorn has small kernels and a milder taste than yellow sweetcorn. White sweetcorn is usually cooked for longer periods of time to achieve a softer texture. If you love white sweetcorn, feel free to use it for this dish.
- Corn on the cob: The most traditional way to make Elotes is with fresh corn on the cob. This type of corn has a sweet flavor and a crunchy texture that makes it perfect for grilling.
- Frozen: Frozen corn can also be used to make Elotes, although it does not have the same sweetness as fresh corn on the cob. Plus, you will have to thaw it first to get rid of extra moisture, but it works well.
- Canned: Canned corn is another widely used option for making Elotes, although its taste may differ from fresh or frozen varieties. Canned corn can be used in place of fresh or frozen if you’re short on time.
Variation Ideas
There are so many ways you can enjoy Elotes. Here are a few ideas to try:
- Meat: While Elotes are traditionally a vegetarian-friendly dish, adding some protein can really take it to the next level. Try adding some diced chicken or turkey for an extra kick of flavor. You can also add bacon bits or chorizo for a heartier meal. In short, any leftover meat can work in adding more texture and flavor to this dish.
- Tacos: One creative way to enjoy elotes is by turning them into tacos. Add your favorite taco ingredients, such as lettuce, tomatoes, cheese and salsa. Serve these tacos in soft or hard shells for a delicious twist on traditional tacos.
- Cheese: Shredded cheddar or queso fresco adds a creamy texture that pairs perfectly with the smoky flavor of grilled corn. For an extra cheesy treat, try adding cream cheese or ricotta to your Elotes. You can also bake the dish to melt the cheese.
- Veggies: Try adding diced bell peppers, jalapenos, tomatoes or onions for crunch; or roasted garlic for an extra garlicky flavor.
- Sour cream: Sour cream is always a welcome addition to any Mexican dish, including Elotes! It has a signature tangy flavor that works well in this dish.
- Black beans: Mix black beans together with chili powder and lime juice and add them over the top of your dish – voila! Black beans not just add flavor but texture and color to this dish.
- Sauces and spices: Sprinkle on some chili powder or drizzle hot sauce before serving for more flavor or heat! You can try different herbs like cilantro or oregano for flavor as well.
How to Store Elotes with Canned Corn
Cover your Elotes tightly with plastic wrap or put in an airtight container. Elotes can be stored in the fridge for up to 3 days. Because of the creamy ingredients, I don’t recommend you freeze the leftovers.
